Talent

  • Chef Jimmy Sneed and his partner, Adam Steely, opened The Frog and the Redneck in Richmond, Virginia in April of 1993. Only six months after opening, The Frog and the Redneck was acclaimed by Esquire Magazine as " One of the Best New Restaurants in America".  It was written about in Gourmet, Bon Appetite, USA Today, The New York Times,
and numerous other national and local publications.

Jimmy was chosen by Julia Childs as a featured chef in her newest series " In Julia's Kitchen with Master Chefs" which can be seen on PBS. He can also be seen on the Discovery Channel's " Great American Chefs" series. Most recently he was nominated for a 1995 James Beardaward for " Best American Chef" in the Mid-Atlantic region.

Jimmy first acquired a national reputation based on his unadulterated preparation and serving of stunning local product while working at Windows on Urbanna Creek in Urbanna, VA. He is a frequent contributor to several major publications that include Fine Cooking magazine and Restaurant Hospitality in addition to writing a light-hearted, sometimes irreverent newsletter for the restaurant.

His first true culinary initiation came while preparing for international law in Paris, in 1974. He had taken a job translating for the American students at Le Cordon Bleu cooking school and it was here that he was exposed to the philosophy of ' Grand Cuisine' and the respect with which great chefs treated their product.

Upon his return to the States he began working in kitchens to further his knowledge of food. His goal was to find a 'master' who would teach him to cook great tasting food. This search led him to Chef Jean-Louis Palladin of Jean-Louis at Watergate in Washington, D.C. who in 1975 had become the youngest chef ever to receive two Michelin Stars. Chef Palladin is considered by many to be the finest chef in America.

Jimmy's stint with Jean-Louis was interrupted by a year spent working as sous chef for Chef Gunther Seeger at the Ritz-Carlton Buckhead in Atlanta, who had been awarded a Michelin star. Chefs Palladin and Seeger were, at that time, the only Michelin rated chefs in America.

In the six years that Chef Sneed and Chef Palladin worked together they formed a close friendship. The 'Frog' of The Frog and the Redneck is meant , in general, as a tribute to what the French have contributed to what is now 'Modern American Cuisine' and specifically to what Chef Palladin taught Jimmy.

The 'bistro' feel of the restaurant is achieved through the use of eye-level beveled mirrors, a long 'dining' bar, and an open view of the rotisserie in the kitchen. The walls of the restaurant are covered with cartoons featuring vignettes of the relationship between the Frog and the Redneck and other culinary scenes. The cartoons and caricature work were drawn by one of the East Coast's more colorful, and talented characters, Happy the Artist.
